A quick and flavourful Thai street food classic made with minced chicken, garlic, chili, and fresh holy basil. Spicy, savoury, and served best over rice with a crispy fried egg.

Pound garlic and chilies together in a mortar and pestle (or mince finely).
Heat oil in a wok or pan. Add garlic and chilies, stir-fry until fragrant.
Add chicken mince and cook until it’s no longer pink.
Season with soy sauces, oyster sauce, fish sauce, and sugar. Stir well.
Toss in the holy basil leaves, mix quickly, and turn off the heat.
Serve hot over jasmine rice, ideally with a crispy fried egg on top.
Recipe Note
Make sure your rice is cooked and ready to be served before you start cooking... believe me on this one, because there's nothing more disappointing than finishing a pan of pad kra pao gai (ผัดกระเพราไก่) only to realize your rice isn't cooked yet!
